A Crescent Roll Kind of Day…

Fall certainly has some beautiful, colorful, warm days.

But it also has some awfully cold, dreary, rainy days.

Today was the latter.

Rain fell for most of the day, but luckily I had nowhere to be and nothing to do outside of the home so I got to stay cuddled up with my boys. We had leftover spaghetti for “breakfast”, though it was really more like lunch time so it was all good. 🙂

I spent most of my day studying and doing homework so I knew I needed to do something that wasn’t too labor intensive…chicken pot pie!! Super simple and super delicious! Had to take hubby to get his vehicle at his buddy’s house (also had to pick him up from said buddy’s house in the wee hours after the friend’s bachelor party) so I made a pit stop at the grocery for the essentials.

I started this quick meal by placing the chicken tenders in a sautee pan, sprinkled them with thyme and covered them in chicken broth. I set the temp to medium, covered it up with a lid, and let them cook up!

Meanwhile, I melted about 1 tablespoon of butter in another pan over medium heat, added about 1/4 cup diced onion and let the onions cook for a bit before adding my frozen veggies. After sauteeing the vegetables for a bit, I added just a smidge more butter.

Once the veggies were cooked, I mixed in a few tablespoons of flour to coat the veggies. I then slowly added some chicken broth and stirred continuously to thicken up the sauce.

The chicken was cooked through at this point so I allowed it to cool a bit and then chopped it up into small pieces. I added it to the vegetable mixture, along with some more chicken broth until it reached the perfect pot pie filling consistency.

I threw it all into a 9×13 inch glass pan…


and topped it with a flattened out crescent roll sheet and baked at 375° for about 15 minutes, until the crust was nice and golden brown on the edges.

And there you have it, delicously simple chicken pot pie!


For some reason, I picked up two tubes of crescent rolls and only needed one. Sooo, I did this:


And the moral of this story is…MORE! More peanut butter, more chocolate chips, more cinnamon, more brown sugar and MORE cream cheese!!
