The presents are wrapped. The tree is decorated. Well, kinda. We got a bit of a dud tree this year which sorta dampened my decorating spirits but it’s as good as it’s gonna get! 🙂
I think this is first year that I haven’t been scrambling around to buy last minute gifts and oddly enough, I think it has a lot to do with the fact that I have to work on Christmas Eve. Knowing that I would be working Christmas Eve and then heading directly to my parents’ house when I get done around 10pm left me no choice but to be extra prepared this year. While I’m a bit bummed that I won’t get to attend Christmas Eve festivities with my extended in-law family, I’m actually not too upset about working Christmas Eve this year. I know it will be a fun, spirited shift that will go by quickly with some of my favorite people… co-workers!
Anyway, with so much checked off of my list already, I’m devoting today to what else? Baking! What’s on the menu, you ask? Mini Chocolate Peppermint Cheesecakes, Red & Green Velvet Cake (to be served with homemade ice cream on Christmas Day- I won’t assemble the cake today, just bake the cakes. Assembly will take place Christmas morning so we don’t end up with soggy cake. 😉 ) and Pumpkin Spice Cake Balls. I know the holiday of pumpkin spice is over, but my Uncle Norm LOVED the cake balls I made for Thanksgiving so I promised to make him some for Christmas too. I’m such a sweet niece!
In addition to all of my baking, I’m also watching “Elf”. THE. SINGLE. BEST. CHRISTMAS. MOVIE. EVER. I’m sorry “It’s a Wonderful Life”, “Home Alone”, and “Christmas Vacation”. You’ll always hold a special place in my heart but you will never be “Elf”. You will never give me the same Christmas cheer that only Buddy the elf can provide. You don’t have silly quotes like “I like smiling. Smiling’s my favorite.” or “Santa?! I know him!!!” You’ll just never compare. I’ll still watch you. Just not on repeat from Thanksgiving night until the very end of Christmas day.
After all, it is almost Christmas. Why not get in the “spirit(s)”?! Also, this Sierra Nevada Celebration Ale has my name allll over it.
