Sooo, even though I should really be focusing on unpacking, doing laundry, cleaning, etc. I really wanted to bake something. In the midst of cleaning cupboards, I found a bunch of boxes/containers/bags/cartons that were nearly empty and just taking up space. I also had a few eggs in the fridge and thought to myself, why not make some “kitchen sink” cookies? While feeling like a contestant on Iron Chef or Cupcake Wars, sifting through possible ingredients, I picked up on a bit of a theme… dark chocolate, oatmeal, almonds…heart healthy! While I won’t pretend that these cookies are truly “healthy”, it is a nice perk that they include ingredients that provide some nice health benefits. And the real perk is that I didn’t have to go to the store for a darn thing!
Ingredients:
-1 box yellow cake mix (yep)
-2 eggs
-1/2 cup oil or applesauce (I didn’t have any applesauce)
-2 tablespoons unsweetened cocoa powder
-1 teaspoon cinnamon
-1/4 teaspoon almond extract
-8-10 Dove Dark Chocolate Promises, chopped
-1/4 cup chopped blanched almonds
-1/2 cup quick cooking oatmeal (not instant)
-splash of milk
Method:
1. Preheat oven to 350.
2. Combine all ingredients in large mixing bowl. Mix until well blended. Add splash of milk if batter seems too dry.
3. Drop by spoonfuls onto baking sheet lined with parchment.
4. Bake for 10-14 minutes or until edges of cookies are browned.
5. Enjoy with a glass of ice cold, deliciously healthy milk!
