Monday, Monday…

Actually, this Monday isn’t so bad. I have the day off to bake & then have dinner/drinks with some gal pals later. And after that, we’re going to see “The Vow”! Have you seen it yet? Did you cry?! Well, crying is a given for me. I always cry. I cry watching the trailer:

Sooo, throw in a couple of margaritas and I’ll be a blubbering baby. Also, I hate that Scott Speedman gets punched in this movie. That will make me cry too.

This weekend was work-filled for me, despite missing my shift on Friday. I worked from 8am-6pm both Saturday & Sunday. 😦 Saturday I basically came home from work and ran to the couch, followed by bed around 10pm, lame! I made the mistake of turning on the tv in bed and found “Love & Basketball”. I adore this movie. I have no idea why. I’ve never played basektball, nor did I ever date a basketball player. I have pretty much nothing in common with any of the characters but I just LOVE the movie! Sooo, I stayed up way later than I should have & my 6:30 Sunday morning alarm came much too quickly.

Hubby and I ran to the grocery store when I got home from work and we ran into our normal dilemma. We’re at the grocery store but what do we want for dinner? I wanted spaghetti and he wanted brats. And that’s exactly what we had. Spaghetti and brats. I didn’t take pics of his brats but here’s my veggie-filled spaghetti. Actually, it was fettucine. And it was delicious.

To make this tasty dish, I used:
Ronzoni Garden Delight Fettucine
Francesco Rinaldi ToBe Healthy Garden Vegetable Pasta Sauce
One zucchini, diced and sauteed with a few splashes of olive oil, garlic, salt and pepper.
I cooked the pasta while sauteeing the zucchini. I added the jar of pasta sauce to the zucchini and heated it through, adding a large handful of baby spinach just before serving. I topped the cooked pasta with the sauce and added a few halved grape tomatoes. This was seriously yummy and packed with vegetable goodness. I can’t wait to eat the leftovers for lunch today!

All that veggie goodness just had to be followed up with something naughty so I had a bowl of this stuff. I know I don’t need it but it’s only around for a limited time!!

We’re dogsitting for my parents, who are vacationing in Cozumel this week. This means extra doggie cuteness in our household for the week. Fielder and Higgins have a bit of a love/hate relationship. Fielder is the total alpha dog and Higgins basically just stays out of his way. They have their moments though, chasing each other around the house and having a fun time, wearing each other out. When it comes to bedtime though, they both have to sleep as close as absolutely possible. Last night, I was sandwich filling. We have a king-sized bed but I was forced to sleep in a Trisha-sized space as I had a dog on either side of me with all or part of it’s body on top of me. And I wouldn’t have it any other way.

Houseguest for the week! Not a fan of the flash.

I already started my baking project for the week by cooking up some bacon, yes that’s right, I’m baking with bacon today. It’s a recipe I’ve made before, will post again with the recipe and pics later!

Are you a cryer? During movies, weddings, Folger’s commercials??
Everyone knows I’m a cryer. A few weeks ago I cried when a family sang happy birthday to their dad/uncle/husband/grandpa as they surprised him with a birthday party at my place of employment. I just can’t help myself. That Kristen Bell video that’s recently gone viral explains it best. If I’m below 3 or above 7 on the emotional scale, I’m crying.
