I’ve been seeing recipes for apple rings all over Pinterest lately. They looked good but I guess I never really thought I had to try them. That is, until tonight, when I had an apple on my counter & not a whole lot else to work with in the “meal sense”. I decided to give it a shot. I learned a few things that I will change up if I make them again but they were tasty & filled me up. Mission: accomplished.
Pancake Battered Apple Rings
3/4 cup milk (I used unsweetened almond milk)
3 tablespoons Sprite (water, juice or another soda would be fine)
1 cup flour
1 tablespoon white sugar
1 tablespoon brown sugar
1 teaspooon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspooon cinnamon
-Whisk all ingredients together in medium bowl.
**I ended up adding a little more Sprite to thin out the batter.
-Remove core from apple(s). I don’t actually have an apple corer so I had to make do with what I had.
-Peel apple if so desired. I didn’t.
-Cut apple into thin, even slices. Mine weren’t so thin or even.
-Dip slices in batter, place on pre-heated griddle, flipping one time until batter is cooked through.
**Because of my thick, uneven slices, the batter didn’t fully cook on some spots, which was okay because this batter is egg-free!
-Top with syrup, butter, or whatever toppings you choose & enjoy!
