While I do have numerous kitchen success stories, I do also have some flops. Take today, for instance. I keep seeing this picture of creamy avocado lime pasta on Pinterest. I had all of the ingredients on hand today and decided to give it a whirl. I knew I was in for trouble when I had to peel my avocado with a vegetable peeler. Never have I needed to do this before. While avocado shopping, I noticed that most felt hard but I thought I did a really good job of picking out the most ripe. Nope. The flavor of my avocado pasta was pretty good but it didn’t look so great. Also, I only had vegetable fettucini on hand for pasta. Here, have a look at it, along with the rest of my lunch.
You’ll also see the latest issue of SELF magazine in that pic. I’m a sucker for anything with Carrie Underwood on the cover. I don’t even love her music, I just think she’s absolutely adorable and love reading all about her. Plus, she’s a super healthy vegan that loves to workout so she always has healthy tips! I also came across something interesting in that issue. Drop 10. Has anyone tried this challenge before? Apparently by filling your diet full of super foods and increasing your HIIT, you can drop 10 pounds in 5 weeks. Sounds legit to me and doesn’t omit any certain food types. I signed up to see what it was all about and might give it a shot.
Back to my flops…
Last week I attempted cauliflower crust pizza. I was craving BBQ Chicken pizza so I decided to make it a bit healthier by making a cauliflower crust. Apparently I didn’t grease the pan well enough because my healthy crust was STUCK to the pan. I was able to get most of it off but it was kind of a mess. A tasty mess though. I plan to try again soon.
The Pancake Battered Apple Rings I made a few weeks ago could be considered a flop too. While they tasted fine, they looked a mess.
One thing that didn’t flop was my breakfast this morning. A healthier twist on my late night strawberry banana custard last night.
Strawberry Banana Oatmeal!!
This was seriously yummy and seriously simple. Here’s how you can make it:
Strawberry Banana Oatmeal
-1/3 cup quick old fashioned oats
-2/3 cup unsweetened almond milk
-1 medium banana, sliced
-3 strawberries, sliced
-1/2 tbsp brown sugar
-handful of granola
-Mix together oats, milk & banana in microwave safe bowl.
-Microwave for 90 seconds.
-Add brown sugar, stir.
-Top with strawberries and granola.

I’ll be honest, I’ve had far more than this, that I’ve chosen not to document. From forgetting to refrigerate mini cheesecakes after making them, to completely omitting baking powder from a cookie recipe, I’ve had my fair share of kitchen mishaps. Oh well… we cook, we learn!
