To be honest, I’d participate in Meatless Monday every week if I didn’t just forget some weeks. For those that don’t know, Meatless Monday is a non-profit initiative to help reduce meat consumption by 15% in order to improve personal health and the health of the planet. It’s a pretty common theme in the blogging world and I try to jump on the band wagon whenever I think of it. As I’ve mentioned before, I don’t think I’d ever be able to go completely vegetarian but I do like the idea of cutting meat out of my diet a couple of days a week. Sometimes I do it without even thinking of it, especially recently, as I realize I don’t crave meat as much as I once did. Chicken used to be my go-to but it just hasn’t really appealed to me as of late. Today’s Meatless Monday was definitely a depiction of my fears associated with a vegetarian lifestyle. Bread and cheese.
I started my day with an Everything Bagel from Panera that I snatched up yesterday when grabbing breakfast for the hubby. I decided to stop by Starbucks for a Skinny Iced Caramel Macchiatto on my way to work. I think I may be developing a
minor major obsession with these.

I didn’t photograph my lunch but it was a portobello & spinach quesadilla with black beans & rice. Yum!
I stopped at the grocery store on my way home for some essentials for the week. I didn’t realize it at the time but guess what, NO MEAT!
Meatless Monday Grocery Haul: Lots o’ fruits & veggies, no meat.
And despite all of those yummy groceries, I just couldn’t get my mind off of the idea of a Jimmy John’s #6 on whole wheat for dinner. Plus, Fielder wanted to go for a ride…

Side note: I’ve never been able to finish more than half of that sandwich…???
Fielder digs Meatless Monday too.
Hope your week is off to a fabulous start!
