VEGGIES!

I promise tomorrow’s post won’t be titled FRUIT & VEGGIES! Pinky swear.

I survived Day 1 of my “cleanse”. Admittedly, I did not consume enough calories but I felt just fine nonetheless. A little bit grumpy maybe. But otherwise fine. I worked until almost 3am Sunday night/Monday morning so I didn’t make it out of bed until 10am or so. It was hard to cram even breakfast & lunch into the little time I had before returning to work so dinner just didn’t happen.

My “brunch” eats from yesterday.

I also had an apple on my way to work & a few other handfuls of berries & melon. I drank a TON of water at work. A ton. I also had a little black coffee on ice. Again, not enough calories but I didn’t feel awful & had plenty of energy to make it through my shift.

I woke up today feeling really great. I had “the soup” for breakfast because eating a pile of raw veggies just felt weird in the morning. Okay, soup felt a bit odd too. I stopped at Starby’s for a Venti Iced Passion Tea (unsweetened, of course). For lunch I had a salad with spinach, red & yellow cherry tomatoes, cucumbers, asparagus & roasted red peppers. I dressed it with a few squeezes of lemon & did indulge in a spoonful of hummus on top. Sorry no food photos!

I felt a little sluggish today. I came home after work & did a few “chores”. I then sat on the couch to catch up on blogs & fell asleep for a good 20 minutes. It could be that I’ve just not been getting enough sleep. Or it could be that this “cleanse” is not providing me with the nutrients I need to get through the day. I had a big spoonful of natural peanut butter as a protein boost.

Dinner tonight was courtesy of the grill. Veggies for me. Burgers for the husband. No, he didn’t eat all in one sitting, but don’t dare him. He could do it.

I had a little too much fun watching him run away from the sprinkler while I grilled.

We haven’t had a significant rain in weeks so we thought we’d better give our (practically dead) lawn a good dousing before the temperatures soar back up into the 90s for the rest of the week.

I realize a tomato is technically a fruit. And I realize that today was technically my vegetable day. But that salsa on that baked potato was AMAZING. I felt totally satisfied after dinner.

That doesn’t mean I didn’t have a little burger envy from across our patio table.

Fielder also had a little eating envy from indoors.

It was a stunningly gorgeous evening so Fielder & I went for a nice, long walk after dinner.

Overall, I’m feeling pretty good about my first two days of “cleansing”. If I find myself sluggish again tomorrow, I’ll know that this isn’t for me and I need to go back to eating whole grains & protein. I’m not about to make myself sick over this. It’s supposed to do the opposite so that would just be ludacris.

My favorite way to eat fresh veggies is straight from the grill so again, my eats tonight weren’t too far off from what I would normally eat. I like that I’m able to eat some of my favorite foods, just the way I like them, all the while sticking to a “plan”.

What is your favorite way to prep veggies? It’s truly amazing what a difference in taste the grill can provide. When it’s not grilling season, I’m totally okay with pan sauteeing veggies but the grill is by far my favorite method.
