Vegan Cream Cheese Carrot Muffins

I may have mentioned this before, but I have a friend who is borderline vegan. I say borderline because she doesn’t eat eggs, but does eat other dairy, although she prefers not to on most occasions. Every once in a while, I like to bake for her. It’s funny how my attempts at making something “almost vegan” generally turn into something “almost healthy”.

The carrots wilting away in my fridge sparked this recipe idea & I decided to make it fully vegan by grabbing some Tofutti Better Than Cream Cheese for the filling.

All of the other ingredients were already in my pantry or fridge, which makes this my favorite kind of recipe; one that uses what I’ve got rather than one that makes me run to the store & spend a bunch of money.

Vegan Cream Cheese Carrot Muffins
makes 20 muffins

1 cup whole wheat flour
1/4 cup milled flax seed
1/4 cup old fashioned oats
1 & 1/2 tsp baking soda
1 tsp baking powder
1/2 tsp salt
2 tsp cinnamon
1/2 cup sugar
Mix well.

In a separate bowl, combine:
3 flax eggs (1 tbsp milled flax seed + 3 tbsp water, per “egg”)
1/2 cup unsweetened applesauce
3 tbsp Greek yogurt (I used Pineapple Chobani)
Mix until fully blended.

Add to above mixture:
1 & 1/2 cups shredded carrots

In another bowl, combine:
1/2 cup Tofutti Better Than Cream Cheese
1/2 cup sugar
1/2 tsp vanilla
splash of water
Mix until very smooth.

Fold dry ingredients into carrot mixture. Stir until combined. Fill greased muffin tins with mixture, about 2/3 full. Create a small divot in each lump of batter, drop cream cheese mixture into divots. Bake for approximately 20 minutes or until a toothpick inserted into cakes comes out clean.

I’m not gonna lie. They taste healthy. Not using an ounce of oil makes these little guys grainy & fibrous but I’ve never been one to complain about something that feels good for me as I’m eating it. The sugary “cream cheese” center provides a bit of naughtiness but this certainly isn’t a muffin to feel guilty about.

They’re good enough to share, that’s for sure.

Even though these were delivered with a don’tfreakoutbuttheytastehealthytoo warning, sharing a healthy treat actually feels pretty great.

I kept a few for myself. They also make a pretty good I’mnevergoingtogettobed midnight snack mixed with Pineapple Chobani & strawberries.
