Do you ever make a meal/snack/dessert, take photos, enjoy eating & intend to blog about it but then never get around to it?
Do you ever write the recipe down on the back of an envelope & then lose the envelope?
This happens to me more than I like to admit. I get really excited about a recipe idea, mix it all up, eat it and then forget about it for awhile. I’ll stumble upon the photo and think “Oh yeah! I still need to blog about that!”
But when I attempt to do so, I realize that I no longer have the envelope & can’t remember for the life of me the exact amounts of anything that I added.
Such is the case with this Cucumber Lemon Hummus.
P.S. I have a really hard time typing Cucumber Lemon. Middle school trips to Bath & Body Works haunt me & try to force me to type Cucumber Melon.
The other part of this confession is that I didn’t have any tahini. Since tahini is an essential ingredient in hummus, I’m not really sure this can be called hummus. I substituted with sesame oil. Since tahini is made from sesame seeds and so is sesame oil, they’re pretty much the same…right?? Okay, maybe not. Moving on.
While I don’t remember exactly how I made it, I do remember that it was quite tasty & worthy of attempting to share the recipe. So here’s my best guess.
Cucumber Lemon Hummus
1 medium cucumber, peeled & diced
1 tsp minced garlic
3 tbsp water
1 tsp ground flax seed
15 oz can chickpeas, rinsed & drained
2 tsp sesame oil
2 tbsp lemon juice
2 tbsp lemon flavored Greek yogurt (regular would be fine too)
1/2 tsp black pepper
1/2 tsp sea salt
1. Mix cucumber, garlic, water & flax in food processer until frothy.
2. Add remaining ingredients & process until smooth.
3. Refrigerate until chilled. Hummus will get thicker as it chills.
There you have it. That’s how I made my refreshing Cucumber Lemon Hummus. Or not…
The weekend is here! Any fun plans? Here’s my plan for the weekend. Tonight- work. Saturday AM- baking. Saturday PM- wedding reception. Sunday AM- recovery/frosting cupcakes. Sunday PM- bridal shower/bachelorette party. Monday- work. BOOOO!! No 3 day weekend for me. Oh well, at least I’ll know what day it is the rest of the week since I’m working on Monday. Don’t those Monday holidays just totally throw you off?!
