OMG Pancakes, that is!
Tina talks about her OMG Pancakes quite often. This morning, with 3 reeeeally freckly bananas looking at me, I decided it was time to try them for myself. Well, a version of them at least.
Here’s Tina’s recipe:
Ingredients:
3 bananas
3 eggs
1/4 cup almond butter
1/4 cup almond meal/flour
1/2 tsp baking powder
1/2 tsp vanilla extract
Directions:
Mash bananas. Combine all ingredients in a food processor and blend well. Pour batter onto a pre-heated, coated-in-non-stick-cooking-spray skillet or fry pan. Cook and flip. Makes 8 pancakes.
And here’s how I did it:
Ingredients:
1 banana (I decided to save the other 2 for another banana recipe.)
1 egg
leftover Justin’s Maple Almond Butter packet (maybe 1 tbsp?)
approx. 2 tbsp Greek yogurt
approx. 2 tbsp whole wheat flour
sprinkle of baking powder
splash of vanilla extract
Directions:
In a medium bowl, mash banana & egg with potato masher. Add other ingredients. Use whisk to combine until smooth(ish). Makes 2 totally different sized pancakes. 🙂
It’s all very scientific, you see.
Despite my lack of measuring & smoothing in the food processor, these OMG pancakes turned out pretty freakin’ good. So good that my husband, who already had his own fast food breakfast, took a bite right out of my top cake. See? Over there on the right??
Topped with a little Jif Natural Crunchy & a drizzle of maple syrup, I was pretty angry that I was missing that one bite.
But I had some yummy pumpkin coffee to make up for it.
We turned on our heat last night. It is most certainly a chilly fall Saturday.
I’m spending the day on the couch, under a blanket, doing hours of Algebra homework.
Hubby is replacing all of the fake oak doors in our house with fake white oak doors. This involves an air compressor that makes a loud noise when it runs. That means I have a furry study buddy rightbymyside that is probably an Algebra genius but can’t speak.
