Last Sunday we had brunch with my parents at Bonfyre Grille. While chatting over the biggest, though certainly not the best, Bloody Mary’s any of us had ever seen, a dessert recipe came up.
Something Weight Watchers friendly. One of those super easy recipes where you skip all of the normal cake mix ingredients & just add diet soda. If you’ve ever gone on Pinterest you know the type.
I didn’t have a recipe and all I knew for sure was this: a bag of frozen berries, a white cake mix, a can of Diet Sprite, bake. I decided to wing it & try a version of my own.
Guess what? It worked! Except I’m still trying to come up with a name for it. It’s not apple crisp. It’s not apple cake. I guess apple cobbler seems the most fitting. But I don’t think the name really matters. It just tastes good. And THAT is what matters.
I’m not on Weight Watchers, never have been. (Actually, that’s a lie. Once upon a time I paid for 4 months online & logged in twice.) I have no idea if this is actually WW friendly & I don’t really care, but if that’s your thing then make two of these!
It could not be simpler.
-2 large apples (I used Gala.)
-cinnamon + any other “fall” spices you like (I used ginger & nutmeg too.)
-2 cups spice cake mix
-1 cup old-fashioned oats
-1 can diet Sprite/Sierra Mist/7Up, whatevs
-8×8 inch glass baking dish
Here’s what you’ll do:
1. Spray dish with non-stick cooking spray.
2. Peel, core & chop apples. Place in dish.
3. Sprinkle generously with spices of choice.
4. Stir together cake mix & oats. Sprinkle over apples.
5. Pour soda over apples & cake mix.
6. Bake at 350 degrees for approximately 45 minutes or until top looks slightly “crispy”.
I know what you’re thinking… “But what am I going to do with the rest of the cake mix?”
And I have an answer. Make another one! I chip clipped mine & I’ll let you know measurements for when I’m inspired to make another something similar.
Moving on. How is it November already? No, really.
More importantly, why does Starbucks already have their holiday cup out? I was taking down Halloween decorations today, no need for Christmas cups already! However, a peppermint mocha in one of those cheerful cups sure sounds tasty!
