The fact that I posted a Thirsty Thursday recipe every week last month (with help from a friend, of course) but can’t complete an actual food recipe might say something about me.
It might say that I’m from Wisconsin.
It might say that I drink my dinner some nights rather than eating.
It might say that I have a stressful job and boozing is the only way I can cope.
It might say that I’ve spent years mixing drinks behind the bar, but have never slaved away in a restaurant kitchen.
One or two of those statements might even be true.
But in all honesty, I just enjoy mixology. Sometimes I like complicated drinks. And sometimes I like to keep it simple. This one falls into the latter category.
When I realized that my attempt to successfully make a recipe out of dinner the other night was a fail, I turned to what I know best… cocktails!
As I mentioned, beer and pineapple juice were both parts of my non-recipe dinner recipe. So beer and pineapple juice became part of my drink recipe, naturally.
Pineapple Beergarita
Ingredients:
1-3 oz tequila
4 oz pineapple juice
juice of one lime
light beer
ice
Directions:
Combine tequila, pineapple juice, and lime juice in a drink shaker. Fill glass with ice. Pour tequila and juice mix over ice. Top with beer.
